1 whole lamb shoulder
1 tbsp ras el hanout (optional)
1 l coconut milk
500 g sweet potatoes
1 tbsp vegetable oil
10 small shallots (or small onions)
500 ml coconut cream (not shaken or stirred)
4 tbsp curry paste
1 tbsp palm sugar
1 tbsp fish sauce
750 g lamb (boned; cut into chunks)
2 tbsp tamarind water
2 tbsp cashew nuts (deep fried)
1 sprig coriander leaves
1 whole red chilli
