1 whole lamb shoulder |
1 tbsp ras el hanout (optional) |
1 l coconut milk |
500 g sweet potatoes |
1 tbsp vegetable oil |
10 small shallots (or small onions) |
500 ml coconut cream (not shaken or stirred) |
4 tbsp curry paste |
1 tbsp palm sugar |
1 tbsp fish sauce |
750 g lamb (boned; cut into chunks) |
2 tbsp tamarind water |
2 tbsp cashew nuts (deep fried) |
1 sprig coriander leaves |
1 whole red chilli |
