5 cups fish stock
1 kg tomatoes
½ whole orange zest
2 tbsp tomato paste

3 sprigs thyme

500 g green prawns
500 g green mussels
1⅕ kg fish fillets (flake, John Dory)
300 g scallops
1 pinch salt (to taste)
1 whole baguette
1 handful gruyere cheese
